  • Olive oil
  • 1 large onion, thinly sliced
  • 2 garlic cloves, crushed
  • 3 tsp grated fresh ginger

  • Pinch cayenne pepper
  • 400g/1 can chopped plum tomatoes
  • 250ml chicken stock (or fish or veg stock)
  • 500g cod or firm white fish fillets, cut into chunks
  • 400g/1 can chickpeas, rinsed and drained
  • 2 tsp honey
  • Salt and freshly ground black pepper
  • Fresh coriander or parsley
  • Flaked almonds, lightly toasted
